Ginger Wasabi Dressing
Serve over a hearty, crunchy salad of slivered carrots, celery, red
pepper, chopped bok choy, and chunks of tofu. Also try with a fruit
salad of papaya, pineapple, and apples. Add more wasabi if you prefer
it extra hot.
Yields: 3/4 cup
Ingredients:
- 5 ounces lite silken tofu
- 1 tablespoon rice vinegar
- 2 teaspoons vegetable oil
- 2 teaspoons wasabi powder
- 1 teaspoon minced shallot or onion
- 1 teaspoon lemon juice
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1/2 teaspoon minced ginger root
- Salt and pepper to taste
In a blender, mix together all ingredients, stopping to scrape down sides
as necessary, until smooth.
